Gorgeous Bacon Wrapped Chicken Patties

makes 24

400g chicken mince

1 tablespoon finely chopped chives

2 tablespoons finely chopped fresh parsley

1 trimmed celery stalk, chopped finely

1 clove garlic, crushed

1 teaspoon finely grated lemon rind

2 tablespoons packaged breadcrumbs

1/4 cup finely grated Parmesan cheese

1/4 cup mayonnaise

3 thin rindless rashes of bacon

 

1. Combine chicken, herbs, celery, garlic, rind, breadcrumbs, cheese and mayonnaise in medium bowl. Shape rounded tablespoons of mixture into patties; place on baking-paper-lined tray. Freeze 30 minutes.

2. Meanwhile cut each bacon rasher in half crossways then cut each half into four lengthways strips. Wrap a strip of bacon around each patty; secure with toothpicks.

3. Cook patties in heated oiled frying pan until browned all over and cooked through. Remove toothpicks before serving.
